Serving Size: 4 servings
Ingredients:
- 1 tsp salt
- 1 onion
- 4 potatoes
- 2 packs of carrots
- 3 dl sea buckthorn juice
- Fresh ginger (minced)
- Oil (for sautéing)
- 1 can of sour cream (120 g)
- Water
- 0.25 tsp white pepper
- 1 vegetable stock cube
Instructions:
1. Peel and chop the carrots, potatoes, and onion.
2. Mince the ginger.
3. Heat oil in a pot.
4. Add the onion and ginger to the pot and sauté for a few minutes.
5. Add the chopped carrots and potatoes, and mix well.
6. Pour in the sea buckthorn juice and add enough water to cover the vegetables.
7. Add salt, white pepper, and the vegetable stock cube.
8. Let the soup simmer for about 20-25 minutes, until the vegetables are soft.
9. Blend the soup until smooth using either an immersion blender or a regular blender.
10. Stir in the sour cream and mix well.
11. Serve hot and enjoy!
