A delicious skillet cookie with a crispy top and soft center, perfect when enjoyed warm, especially with vanilla ice cream. Preparation Time: 1 hour 15 minutes
Serving Size: 8-10 servings
Ingredients:
- 225 g room temperature butter - 125 g white granulated sugar
- 225 g brown sugar
- 1 tablespoon vanilla extract
- 2 tablespoons milk powder
- 1 tablespoon dark cocoa powder
- 1 tablespoon malt extract
- 1.5 teaspoons fine sea salt
- 1 teaspoon baking soda
- 0.5 teaspoon baking powder
- A pinch of ground nutmeg
- 1 cold large egg
- 350 g all-purpose flour
- 400 g chocolate (roughly chopped, various types)
- Butter for greasing the skillet
Instructions:
1. Preheat the oven to 200°C (400°F). 2. Chop the chocolate into various sizes with a large knife.
3. In a mixing bowl, combine room temperature butter, granulated sugar, brown sugar, vanilla extract, milk powder, cocoa powder, malt extract, sea salt, baking soda, baking powder, and nutmeg. Beat until light and fluffy.
4. Add the cold egg and continue mixing until the dough is smooth.
5. Reduce the mixer speed to low, gradually add the flour, followed by the chopped chocolate. Mix until the dough is firm.
6. Generously grease a 25 cm (10 inch) cast-iron skillet with butter. Pour the dough into the skillet and spread it evenly.
7. Bake in the middle of the oven for about 35 minutes, until the top is golden brown and the center is soft.
8. Remove the skillet from the oven and let it cool in the skillet for about an hour.
9. Enjoy warm, preferably with cold milk or vanilla ice cream.
