Ingredients:
- 400 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 150 g fresh spinach
- 100 g feta cheese, crumbled
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic, and sauté for about 3 minutes.
3. Add the bell pepper to the skillet and cook for another 5 minutes until softened.
4. Stir in the cherry tomatoes and spinach, cooking until the spinach has wilted.
5. Mix the cooked pasta into the vegetables. Season with salt and pepper.
6. Add the crumbled feta cheese and stir well.
7. Serve the portions garnished with fresh basil.
