Preparation time: 20 minutes
Serving size: 4 servings
Ingredients:
- 300 g spaghetti
- 150 g bacon (or guanciale)
- 2 eggs
- 100 g grated Parmesan cheese
- 2 cloves garlic
- Salt and black pepper to taste
- Fresh parsley (optional, for garnish)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a frying pan and add the bacon. Cook until crispy.
3. Add minced garlic to the pan and sauté for another minute.
4. Once the pasta is cooked, drain it and reserve a little pasta water.
5. Add the drained pasta to the pan with bacon and garlic. Toss well to combine.
6. In a bowl, crack the eggs, add the Parmesan cheese, and mix until smooth.
7. Remove the pan from heat and pour the egg mixture over the pasta. Stir quickly to prevent the eggs from cooking too much.
8. If the mixture is too thick, add a bit of reserved pasta water until you reach the desired consistency.
9. Season with salt and black pepper to taste. Garnish with fresh parsley if desired.
10. Serve immediately.
