These tasty carrot fritters are a great way to use fresh carrots and are perfect for breakfast or a snack. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 medium carrots, grated
- 2 dl all-purpose flour
- 1 dl milk
- 2 eggs
- 1 tsp baking powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp oil for frying
- Fresh herbs (such as parsley or chives) optional
Instructions:
1. Grate the carrots finely and place them in a bowl.
2. Add the flour, milk, eggs, baking powder, salt, and black pepper to the grated carrots. Mix well until the batter is smooth.
3. Heat a frying pan over medium heat and add the oil.
4. Pour the batter onto the pan to form fritters of your desired size. Cook for about 3-4 minutes on each side until golden brown.
5. Serve the fritters with fresh herbs or your choice of accompaniment, such as yogurt or salad.
