Ingredients

Crust:
- 1 dl potato starch flour
- 2 dl all-purpose flour
- ½ tsp baking powder
- 100 g cold margarine
- 1 dl water
Filling:
- Oil for frying
- 200 g onion, chopped
- 1-2 garlic cloves, minced
- 1 yellow bell pepper, diced
- 3 tomatoes, cut into wedges
- Black pepper, to taste
- ½ tsp regular or herb salt
- 200 g feta cheese, diced
- ½ tsp oregano
- 2 dl cream
- 3 eggs

Instructions

1. Prepare the crust: In a bowl, mix potato starch flour, all-purpose flour, and baking powder.
2. Add cold margarine and rub it into the flour mixture until it resembles breadcrumbs.
3. Stir in the water and mix until the dough is smooth. Press the dough into the bottom and sides of a pie dish.
4. Pre-bake the crust in a preheated oven at 200°C (392°F) for about 10 minutes.
5. For the filling: Heat oil in a pan and sauté the chopped onions and minced garlic until soft.
6. Add the diced bell pepper and tomato wedges, seasoning with black pepper and salt. Cook for a few minutes.
7. Remove the pan from heat and mix in the feta cheese and oregano.
8. In a bowl, crack the eggs, add the cream, and whisk well.
9. Combine the vegetable mixture with the egg-cream mixture.
10. Pour the filling over the pre-baked crust.
11. Bake the pie at 200°C (392°F) for about 30-40 minutes, or until the filling is set and the top is golden brown.
12. Allow to cool for a moment before serving. Enjoy!
