A refreshing and delicious salad that combines sautéed fennel, Serrano ham, and Parmesan cheese, served on a bed of greens. Perfect for a light meal or side dish. Preparation Time: 30 minutes

Ingredients:
- 1 large fennel bulb
- 1 small cucumber
- 4-6 slices of Serrano ham
- 1/4 cup shaved Parmesan cheese
- Freshly ground black pepper
- 2 tablespoons olive oil
- Juice of 1 fresh lemon
- Salt (optional)
- 2 tablespoons canola oil (for sautéing the fennel)
Instructions:
1. Cut the fennel into wedges.
2. Heat the canola oil in a skillet and sauté the fennel wedges until they turn slightly brown and soften a bit (but not completely).
3. Squeeze fresh lemon juice over the fennel while cooking and lightly season with salt and black pepper.
4. On a plate, layer cucumber slices, sautéed fennel, and Serrano ham on top of salad greens.
5. Sprinkle shaved Parmesan cheese over the salad.
6. Drizzle with olive oil and additional pepper, and add more lemon juice if desired.
