Ingredients:
- 250 g pasta (e.g., penne or spaghetti) - 200 g fresh spinach
- 200 ml cream
- 1 small onion
- 2 garlic cloves
- 50 g grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some cooking water. 2. Peel and finely chop the onion and garlic.
3. Heat olive oil in a skillet over medium heat. Add the onion and garlic, sautéing for about 2-3 minutes until soft.
4. Add fresh spinach to the skillet and cook until wilted.
5. Pour in the cream and mix well. Let it simmer on low heat for a few minutes.
6. Add the cooked pasta to the sauce. Stir well. If the sauce is too thick, you can add a little reserved cooking water.
7. Stir in the grated Parmesan cheese, salt, and pepper. Mix and heat for a moment longer.
8. Serve warm, garnished with fresh basil if desired.
