A fast and flavorful vegetable pasta that can be prepared in under 30 minutes. Perfect for a nutritious and delicious weeknight meal.

Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 100 g spinach
- Salt and pepper to taste
- 50 g Parmesan cheese, grated (optional)
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve some of the cooking water.
2. Heat olive oil in a large pan over medium heat. Add onion and garlic, sauté for about 2-3 minutes.
3. Add bell pepper and zucchini, continue cooking for about 5 minutes until the vegetables are tender.
4. Add cherry tomatoes and spinach to the pan. Cook for a few more minutes until the spinach wilts.
5. Combine the cooked pasta with the vegetables in the pan. Mix well, adding a bit of reserved cooking water if needed to prevent dryness.
6. Season with salt and pepper. Serve with grated Parmesan and fresh basil if desired.
