Pickled Salmon with Mustard Sauce

A simple dish perfect for summer celebrations. Preparation Time: 6 hours + marinating
Serving Size: 4
Ingredients:
- 400 g salmon fillet - 1 carrot
- 1 onion
- 1 dl white wine vinegar
- 1 dl water
- 1 dl sugar
- 1 tsp salt
- 2 egg yolks
- 3 tbsp mustard
- 1 tbsp sugar
- 1 tsp salt
- 2 garlic cloves
- 1 dl oil
- 1 dl fresh dill
- 1 lemon
Instructions:
1. Chop the carrot and onion into bite-sized pieces. In a saucepan, combine the marinade ingredients and bring to a boil. Allow it to cool for a couple of minutes, then pour over the salmon. Let marinate in the refrigerator for at least 6 hours. 2. Whisk the egg yolks until thick. Add the mustard and mix well. Incorporate sugar and salt. Crush the garlic cloves and add to the bowl along with the vinegar, dill, and lemon juice. Gradually drizzle in the oil while continuously stirring.
3. Serve the salmon with the mustard sauce. Garnish with lemon slices and fresh dill.
