Ingredients:
For the Meringue:
- 3 egg whites
- 1 cup (250g) granulated sugar
- 1 tablespoon instant coffee powder, finely ground
- 1 tablespoon cornstarch
- 1 teaspoon white vinegar
For the Filling:
- 1 cup (240ml) heavy cream
- 1 cup (240g) Greek yogurt
- 1 teaspoon vanilla sugar
- A handful of nuts, toasted and chopped
- Fresh berries or figs for decoration
- Chocolate sauce
Instructions:
1. Meringue:
- Beat the egg whites until stiff peaks form. Gradually add the sugar while continuing to beat.
- Mix in the instant coffee powder, cornstarch, and vinegar until smooth.
- Spread the meringue mixture onto parchment paper in a circle about 9 inches in diameter, or shape it into a wreath.
- Bake in a preheated oven at 240°F (120°C) for about 15 minutes, then reduce the temperature to 210°F (100°C) and bake for an additional hour until the base is airy and light.
- Leave the meringue in the residual heat, preferably overnight.
2. Filling:
- Whip the heavy cream and then fold in the Greek yogurt and vanilla sugar until well combined.
- Toast the nuts and chop them into smaller pieces.
- Just before serving, spread the whipped mixture over the meringue base, then top with nuts, berries, and drizzle with chocolate sauce.
