Ingredients:
- 300 g pasta (e.g., fusilli or penne)
- 200 g fresh spinach
- 200 g fresh mushrooms (e.g., button mushrooms)
- 200 ml cooking cream
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- Salt and black pepper to taste
- 50 g Parmesan cheese (grated)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a bit of the cooking water.
2. Peel and finely chop the onion and garlic.
3. Heat olive oil in a frying pan over medium heat. Add the onion and garlic, and sauté for about 2-3 minutes.
4. Add the sliced mushrooms to the pan and cook until they soften and get a bit of color, about 5-7 minutes.
5. Add the fresh spinach to the pan and cook until it has completely wilted.
6. Pour the cooking cream into the pan and mix well. Let the sauce simmer on low heat for a few minutes.
7. Season with salt and black pepper to taste. If the sauce is too thick, you can add some reserved pasta cooking water.
8. Add the cooked pasta to the sauce and mix well.
9. Serve the portions topped with grated Parmesan cheese.
