A delicious and healthy side dish that pairs well with almost any meal. Easy to prepare and full of flavor!

Ingredients:

- 2 bell peppers (any color)
- 1 zucchini
- 1 red onion
- 2 carrots
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Rinse and chop all the vegetables into bite-sized pieces.
3. Place the vegetables in a large bowl and add the olive oil, salt, black pepper, rosemary, and thyme.
4. Mix the ingredients well to ensure the spices are evenly distributed.
5. Spread the vegetables evenly on a baking sheet.
6. Roast in the oven for about 25–30 minutes, until the vegetables are tender and slightly browned.
7. Serve warm.
