Ingredients:
- 250 g pasta (e.g., spaghetti or fusilli)
- 1 red bell pepper
- 1 yellow bell pepper
- 1 zucchini
- 1 small red onion
- 2 garlic cloves
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water. Drain and set aside.
2. Peel and finely chop the red onion and garlic. Dice the bell peppers and zucchini.
3. Heat olive oil in a skillet over medium heat. Add the red onion and garlic, and sauté for about 2-3 minutes.
4. Add the bell peppers and zucchini to the skillet. Cook for about 5-7 minutes, until the vegetables are tender.
5. Stir in the cooked pasta with the vegetables. Season with salt and pepper.
6. Serve immediately and garnish with fresh basil if desired.
