Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 100 grams green beans, chopped
- Fresh parsley for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and crushed garlic, sauté for about 3 minutes until soft.
3. Add carrots, potatoes, zucchini, and bell pepper. Cook for another 5 minutes, stirring occasionally.
4. Pour in the vegetable broth and season with salt, black pepper, thyme, and basil. Bring to a boil.
5. Reduce the heat and let the soup simmer for about 15 minutes until the vegetables are tender.
6. Add the green beans and cook for an additional 5 minutes.
7. Taste and adjust seasoning with more salt or pepper if needed.
8. Serve hot, garnished with fresh parsley.
