- 1 zucchini, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- Fresh herbs (e.g., parsley or basil) for serving
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and crushed garlic, sauté for about 2-3 minutes until the onion is soft.
3. Add the carrots, celery, potato, zucchini, and bell pepper. Cook the vegetables for about 5 minutes.
