Ingredients:
- 400 g spaghetti
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a skillet over medium heat and add the bacon or pancetta. Cook until crispy.
3. Add the crushed garlic to the bacon and cook for another minute.
4. In a bowl, whisk together the eggs and grated Parmesan cheese. Season with salt and black pepper to taste.
5. Once the spaghetti is ready, drain it but reserve a little pasta water.
6. Add the spaghetti to the skillet with the bacon and garlic. Remove the skillet from heat.
7. Pour the egg mixture over the spaghetti and quickly toss to combine. Add reserved pasta water if needed for a creamy sauce.
8. Serve immediately, garnished with fresh parsley if desired.
