Ingredients:
- 300 g pasta (such as spaghetti or fettuccine)
- 150 g bacon or pancetta
- 2 eggs
- 100 ml cream
- 50 g grated Parmesan cheese
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain the pasta, saving a little bit of the cooking water.
2. Meanwhile, heat a skillet over medium heat and cook the bacon or pancetta until crispy. Remove the skillet from heat.
3. In a bowl, whisk together the eggs, cream, Parmesan cheese, salt, and black pepper.
4. Add the hot pasta to the skillet with the bacon and mix well, ensuring the pasta is hot enough to partially cook the egg mixture.
5. Quickly add the egg mixture to the pasta, stirring rapidly to combine. If necessary, add a little of the reserved cooking water to achieve a creamy sauce.
6. Serve immediately, garnished with fresh parsley.
