A delicious dish that combines the flavors of Earl Grey tea with tender lentils and root vegetables, highlighting the taste of vegetables and smoked pork belly. Perfect as a main course!

Ingredients:
- 1 carrot
- 1 celery root
- 1 yellow onion
- 2 cloves garlic
- 100 g green lentils (soaked)
- Smoked pork belly (to taste)
- About 6 sprigs fresh thyme (leaves stripped)
- 1 bay leaf
- 1 liter Earl Grey tea (5 teabags)
- Olive oil
- Salt
Instructions:
1. Soak the lentils in cold water for about 8 hours.
2. Boil 1 liter of water and add the teabags. Let steep for 3-5 minutes before removing the bags.
3. Chop the carrot, celery root, yellow onion, and garlic into 0.5 cm pieces.
4. Place all the chopped vegetables in a pot, add thyme and bay leaf.
5. Pour the Earl Grey tea over the vegetables and let simmer on low heat for about 25 minutes.
6. Chop the smoked pork belly and add it to the pot. Allow it to simmer for a little longer.
7. Add salt to taste.
8. Spoon onto plates and drain a little liquid if necessary.
9. Drizzle olive oil on top and garnish with fresh thyme leaves.
10. Serve with fresh crusty bread.
