A delightful and unique rhubarb Earl Grey jam that adds flavor to many desserts. This easy recipe creates delicious jam, perfect for pairing with cheeses, ice cream, and baked goods.

Ingredients:

- 5 dl rhubarb (chopped, peel if necessary)
- 0.5 dl water
- 1 tablespoon Earl Grey tea
- 1 vanilla bean (split)
- Juice of 1/2 lemon
- A pinch of salt
- 2.5 dl preserving sugar
- Clean jar (about 0.5 liters capacity) or several small jars

Instructions:

1. Spoon the Earl Grey tea into a tea infuser or steeping bag and place it in a pot.
2. Add the chopped rhubarb, split vanilla bean, lemon juice, and a pinch of salt to the pot.
3. Bring the mixture to a boil and then add the preserving sugar while stirring continuously.
4. Cook for about 10 minutes, stirring occasionally. Skim off any foam that forms on the surface.
5. Remove the tea bag or infuser and the pieces of vanilla bean. Allow the jam to cool slightly.
6. Pour the jam into pre-warmed jars and seal the lids. Store in a cool place.
Enjoy this jam with ripe Brie cheese, ice cream, pancakes, or cake. It also makes a wonderful addition to breakfast porridge!
