A delicious twist on classic cinnamon rolls filled with dulce de leche. Preparation Time: 2 hours
Serving Size: 12 rolls
Ingredients:
- 350 g all-purpose flour
- 80 g sugar
- ½ packet (5.5 g) dry yeast
- 1 tsp salt
- 2 tsp ground cardamom
- 0.5 tsp cinnamon
- 70 g melted butter (at room temperature)
- 1 dl milk (at room temperature)
- 100 g crème fraîche
- 1 egg (at room temperature)
- 2 tsp vanilla extract
Filling:
- 30 g soft butter
- 100 g dulce de leche
- 2 tbsp raw cane sugar
- 2 tbsp cinnamon
Topping:
- 1 egg (for brushing)
- 50 g cream cheese
- 2 tbsp dulce de leche
- 1 tbsp soft butter
- 1 - 1.5 tbsp milk
- A pinch of salt
- 60 g powdered sugar
Instructions:
1. In a mixing bowl, combine the dry ingredients for the dough: flour, sugar, dry yeast, salt, cardamom, and cinnamon.
2. In another bowl, warm the liquid ingredients: melted butter, milk, crème fraîche, egg, and vanilla extract to about 40°C (104°F).
3. Mix the warm liquid ingredients into the dry ingredients, attach a dough hook to your mixer, and knead the dough for about 10 minutes until elastic.
4. Cover the bowl and let the dough rise in a warm place for about 1 hour, or until it has doubled in size.
5. In a separate bowl, mix the filling ingredients well.
6. Roll the dough out on a floured surface into a thin rectangle (approximately 35 x 60 cm) and spread the filling over half of the dough.
7. Fold the dough in half, roll it out a bit more, then cut into strips, roll each strip into a spiral, and shape them into a bun.
8. Let the buns rise under a cloth for about 30 minutes.
9. Brush the buns with beaten egg and bake in the middle of a preheated oven at 200°C (392°F) for about 15 minutes.
10. For the topping, mix all the ingredients until smooth and drizzle or spread over the slightly cooled buns.
