A delicious detox salad that helps you feel lighter and improves digestion. Preparation time is just 30 minutes and serves four.

Ingredients:

- 2 cups fresh green leaves (e.g., spinach or kale)
- 1 cup cherry tomatoes
- 1 cucumber
- 1 avocado
- 1/2 cup quinoa
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:

1. Cook the quinoa according to package instructions and let it cool.
2. Rinse the green leaves and place them in a large bowl.
3. Halve the cherry tomatoes and slice the cucumber. Add them to the bowl.
4. Dice the avocado and add it to the other ingredients.
5. Add the cooled quinoa to the bowl.
6. In a separate bowl, mix the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad.
7. Toss all ingredients well and serve immediately.
