A delicious and nutritious quinoa salad perfect for winter, packed with flavor and nutrients. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 1 cup quinoa - 2 cups water
- 1 red cabbage, thinly sliced
- 1 apple, diced
- 1/2 cup nuts (such as walnuts or hazelnuts)
- 1/2 cup dried cranberries
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- Salt and pepper to taste
Instructions:
1. Rinse the quinoa thoroughly under cold water. Cook the quinoa in water in a saucepan until it's tender and the liquid is absorbed (about 15 minutes). Allow to cool. 2. Meanwhile, prepare the other ingredients by slicing the red cabbage and dicing the apple.
3. Once the quinoa has cooled, combine it with the red cabbage, apple, nuts, cranberries, and parsley in a large bowl.
4. In a separate bowl, mix together the olive oil, apple cider vinegar, salt, and pepper. Pour the dressing over the salad and mix well.
5. Serve immediately or allow the flavors to meld in the refrigerator for about an hour before serving.
