These zucchini fritters are tasty and easy to prepare. They make a great side dish or a light main course. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 medium zucchinis
- 1 cup all-purpose flour
- 1 cup grated Parmesan cheese
- 1 egg
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 2 tbsp olive oil for frying
Instructions:
1. Grate the zucchinis coarsely and place them in a bowl.
2. Squeeze out the excess moisture from the grated zucchini.
3. Add the flour, Parmesan cheese, egg, minced garlic, salt, black pepper, and oregano to the zucchini. Mix well.
4. Heat the olive oil in a frying pan over medium heat.
5. Shape the mixture into small fritters and fry them in the pan for about 3-4 minutes on each side, or until golden brown.
6. Remove the fritters and place them on a paper towel to drain excess oil.
7. Serve warm with a salad or dipping sauce.
