Ingredients:
- 2 medium zucchinis
- 2 eggs
- 1 cup flour (wheat or gluten-free)
- 1 cup grated cheese (e.g., cheddar or mozzarella)
- 1/2 cup chopped fresh parsley
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Oil for frying
Instructions:
1. Grate the zucchinis and squeeze out any excess moisture.
2. In a bowl, mix together the grated zucchini, eggs, flour, cheese, parsley, salt, black pepper, and garlic powder.
3. Heat a frying pan over medium heat and add a little oil.
4. Shape the mixture into small fritters and fry them in the pan for about 4-5 minutes on each side, until golden brown.
