Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 400 g ripe tomatoes (cherry or regular)
- 250 g mozzarella cheese
- 2 tablespoons olive oil
- 2 garlic cloves
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta according to the package instructions in salted water until al dente. Drain and reserve a little cooking water.
2. Chop the tomatoes and cut the mozzarella into cubes.
3. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes.
4. Add the tomatoes to the skillet and cook for about 5 minutes until they soften.
5. Add the cooked pasta and mozzarella pieces to the skillet. Mix well. If needed, add a bit of the reserved cooking water for a pleasant consistency.
6. Season with salt and black pepper. Serve with fresh basil on top.
