Ingredients:
- 300 g pasta (e.g., penne or spaghetti)
- 200 g fresh cherry tomatoes
- 150 g mozzarella cheese
- 2 garlic cloves
- 3 tbsp olive oil
- Salt to taste
- Black pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve a little pasta cooking water.
2. Halve the cherry tomatoes and crush the garlic cloves.
3. Heat the olive oil in a large skillet over medium heat. Add the crushed garlic and sauté for about a minute until golden brown.
4. Add the tomatoes to the skillet and cook for about 5 minutes until they are soft and juicy.
5. Cut the mozzarella into small pieces and add it to the skillet. Stir until the cheese starts to melt.
6. Add the cooked pasta to the skillet and mix well. If needed, add a little pasta cooking water to make the mixture creamier.
7. Season with salt and black pepper to taste. Garnish with fresh basil before serving.
