This quick and easy pasta dish is perfect for weeknight dinners. Fresh tomatoes and mozzarella combine for a delightful flavor experience. Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g cherry tomatoes
- 200 g mozzarella cheese
- 2 tbsp olive oil
- 2 garlic cloves
- 1 dl fresh basil
- Salt and pepper to taste
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions. Drain and reserve a bit of the cooking water.
2. Cut the cherry tomatoes in half and dice the mozzarella cheese.
3. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
4. Add the cherry tomatoes to the skillet and cook for about 5 minutes until softened.
5. Add the cooked pasta to the skillet and mix. If necessary, add a bit of reserved cooking water to keep the mixture from being too dry.
6. Stir in the mozzarella cubes and chopped basil. Season with salt and pepper.
7. Serve immediately and optionally sprinkle with Parmesan cheese.
