Ingredients:
- 300 g pasta (e.g. spaghetti or penne)
- 250 g cherry tomatoes, halved
- 200 g mozzarella cheese, diced
- 2 garlic cloves, minced
- 3 tbsp olive oil
- Fresh basil, chopped
- Salt and black pepper, to taste
- (Optional) balsamic vinegar for serving
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain and reserve some cooking water.
2. Heat the olive oil in a large pan over medium heat. Add the minced garlic and sauté until golden brown.
3. Add the halved cherry tomatoes to the pan and cook for about 5 minutes, until the tomatoes soften slightly.
4. Add the cooked pasta to the pan and mix well. If needed, add reserved cooking water to prevent the pasta from drying out.
5. Stir in the diced mozzarella and chopped basil. Mix until the cheese begins to melt.
6. Season with salt and black pepper to taste. Serve immediately, drizzled with balsamic vinegar if desired.
