A traditional Italian pasta carbonara that's quick and easy to prepare. The creamy sauce and salty bacon make this dish perfect for a weeknight dinner. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g pasta (spaghetti or linguine) - 150 g bacon or guanciale
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves (optional)
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente. 2. Meanwhile, heat a skillet over medium heat and cook the bacon until crispy. Add the garlic if using and sauté for an additional minute.
3. Once the pasta is done, drain it and reserve a bit of the cooking water.
4. Add the drained pasta to the skillet with the bacon and mix well.
5. Whisk together the eggs and stir in the grated Parmesan cheese. Quickly combine this mixture with the pasta, stirring rapidly to prevent the eggs from scrambling.
6. If needed, add a little reserved pasta water to achieve a creamy sauce.
7. Season with salt and black pepper. Garnish with fresh parsley before serving.
