Ingredients:
- 400 g spaghetti
- 150 g bacon or guanciale
- 3 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the spaghetti in salted water according to the package instructions until al dente.
2. Peel and finely chop the garlic cloves. Cut the bacon into small pieces.
3. Fry the bacon in a pan over medium heat until crispy. Add the garlic and sauté for another minute.
4. In a bowl, mix together the eggs, grated Parmesan cheese, and black pepper.
5. Drain the pasta, reserving a bit of the cooking water. Add the pasta to the pan with the bacon and garlic.
6. Remove the pan from heat and stir in the egg mixture with the pasta. Add reserved cooking water as needed to achieve a creamy sauce.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese on top.
