Ingredients:
- 4 medium carrots
- 1 cup rolled oats
- 1 cup flour (wheat or gluten-free)
- 1 small onion
- 2 garlic cloves
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1/2 tsp dried herbs (e.g., thyme or basil)
- 1 egg
- 3 tbsp olive oil for frying
Instructions:
1. Grate the carrots finely and squeeze out any excess moisture.
2. Finely chop the onion and garlic.
3. In a bowl, mix the grated carrots, rolled oats, flour, onion, garlic, salt, pepper, paprika, and herbs.
4. Add the egg to the mixture and stir well until all ingredients are combined.
5. Shape the mixture into patties, about 1 cm thick.
6. Heat olive oil in a frying pan over medium heat.
7. Fry the patties for about 4-5 minutes on each side, until they are beautifully golden brown.
8. Serve warm, for example with a salad or yogurt sauce.
