Kinuskikuppikakut with Orange

Delicious caramel cupcakes infused with orange flavor, topped with a creamy white chocolate and orange zest frosting. Preparation Time: 1 hour
Serving Size: 12 cupcakes
Ingredients:
- Caramel:
- 2 dl sugar
- 2 dl cream
- A pinch of salt
- 150 g butter
- 1 dl sugar
- 1 dl muscovado sugar
- Batter:
- 2 large eggs
- 4 dl all-purpose flour
- 1 dl almond flour
- 1 tsp baking powder
- 1 dl orange juice (juice of about one orange)
- 100 g dark chocolate
- Frosting:
- 100 g white chocolate
- 100 g cream cheese
- 1 dl whipped cream
- 2 tsp orange zest
Instructions:
1. Begin by making the caramel. Combine sugar, cream, salt, and butter in a saucepan. Heat while stirring until the sugar dissolves. Let it cool.
2. Wash the orange thoroughly, then zest it and squeeze out the juice.
3. In a bowl, cream together the butter and sugar. Add the eggs one at a time, mixing well after each addition.
4. Combine the dry ingredients (flour, almond flour, baking powder) and alternate adding them to the batter with the orange juice.
5. Divide the batter into muffin tins.
6. Place the cooled caramel in a piping bag and pipe it into the center of each muffin.
7. Bake at 180°C (350°F) for about 20 minutes. Allow to cool.
8. Melt the white chocolate in the microwave carefully (about 20 seconds at a time).
9. Mix the melted white chocolate with cream cheese and season with orange zest.
10. Whip the cream until soft peaks form and fold it into the chocolate cream cheese mixture.
11. Pipe the frosting onto the cooled cupcakes.
