Ingredients:
- 400 g spaghetti
- 150 g bacon or guanciale
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves, minced
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Cut the bacon into small pieces and fry it in a pan over medium heat until crispy.
3. Add the minced garlic to the pan and sauté for an additional minute until golden.
4. In a bowl, whisk the eggs and mix in the grated Parmesan cheese, salt, and black pepper.
5. Once the pasta is cooked, drain it and reserve a bit of the cooking water.
6. Add the pasta to the pan with the bacon and garlic. Remove the pan from the heat.
7. Pour the egg mixture over the pasta and quickly toss to combine. Add reserved cooking water as needed to achieve a creamy consistency.
8. Serve immediately, garnished with fresh parsley and extra black pepper if desired.
