Serving Size: 4 servings
Ingredients:
- 300 g fresh spinach
- 1 onion
- 2 garlic cloves
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt to taste
- Black pepper to taste
- (Optional: grated Parmesan cheese for serving)
Instructions:
1. Peel and chop the onion and garlic.
2. Melt the butter in a pot over medium heat. Add the onion and garlic, and sauté until soft.
3. Add the washed and dried spinach to the pot. Cook until the spinach has wilted.
4. Pour the vegetable broth into the pot and let the soup simmer for about 10 minutes.
5. Stir in the cream and heat the soup through. Season with salt and black pepper.
6. Blend the soup with an immersion blender or in a regular blender until completely smooth.
7. Serve warm, optionally sprinkling grated Parmesan cheese on top.
