A delicious recipe combining pasta, fresh spinach, and mushrooms in a creamy sauce. Perfect for a weeknight dinner!

Serving Size: 4 servings
Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 g mushrooms (e.g., button or portobello)
- 1 onion
- 2 garlic cloves
- 200 ml heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve a little pasta water.
2. Finely chop the onion and garlic. Slice the mushrooms.
3. Heat olive oil in a large pan over medium heat. Add the onion and garlic, sauté until softened.
4. Add mushrooms to the pan and cook until golden brown.
5. Add fresh spinach to the pan and cook until wilted.
6. Pour in the cream and mix well. Let the sauce simmer on low heat for a few minutes until it thickens slightly. Season with salt and pepper.
7. Toss the cooked pasta with the sauce. If the sauce is too thick, add a bit of reserved pasta water.
8. Serve immediately, optionally sprinkling grated Parmesan cheese on top.
