Ingredients:
- 8 oz (225 g) pasta of your choice
- 2 cups fresh spinach, washed and chopped
- 1 cup mushrooms, sliced
- 1 cup heavy cream
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
3. Add the sliced mushrooms to the skillet and cook until they start to release their moisture, about 5 minutes.
4. Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
5. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and well combined.
6. Season with salt and pepper to taste.
