Ingredients:
- 8 oz (225 g) pasta of your choice - 2 cups fresh spinach, washed
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: red pepper flakes for heat
Instructions:
1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside. 2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
3. Add sliced mushrooms to the skillet and cook for about 5-7 minutes until they are tender and browned.
4. Stir in the fresh spinach and cook until wilted, about 2 minutes.
5. Lower the heat and pour in the heavy cream. Stir well to combine.
6. Add the grated Parmesan cheese and mix until the sauce is smooth. Season with salt, pepper, and red pepper flakes, if using.
7. Toss the cooked pasta with the creamy mushroom and spinach sauce until well coated.
