Ingredients:
- 400 g pasta (e.g., spaghetti or fettuccine) - 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves, minced
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook pasta in salted water according to package instructions until al dente. 2. Meanwhile, cook the bacon or pancetta in a pan over medium heat until crispy. Add the minced garlic and sauté for another minute.
3. Once the pasta is cooked, drain it and reserve a bit of the cooking water.
4. Toss the pasta with the bacon and garlic in the pan. Remove the pan from the heat.
5. In a bowl, beat the eggs and mix in the grated Parmesan cheese. Add a little reserved pasta water to thin the mixture.
6. Pour the egg mixture over the pasta and stir quickly to prevent the eggs from scrambling. Season with salt and black pepper.
7. Serve immediately, garnished with fresh parsley if desired.
