Ingredients:
- 12 oz (340g) fettuccine or spaghetti
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the pasta according to package instructions in a large pot of salted boiling water. Reserve 1 cup of pasta water, then drain the pasta and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, but not browned.
3. Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted and smooth.
4. Add the cooked pasta to the skillet, tossing to coat in the creamy garlic sauce. If the sauce is too thick, gradually add the reserved pasta water until desired consistency is reached.
5. Season with salt and pepper to taste.
6. Serve immediately, garnished with chopped fresh parsley.
