Ingredients:
- 8 oz (225 g) pasta (fettuccine or spaghetti)
- 2 tbsp olive oil
- 3 cups sliced mushrooms (button or cremini)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the pasta according to package instructions in salted boiling water. Reserve 1/2 cup of pasta water, then drain the pasta.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden brown, about 5-7 minutes.
3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
4. Lower the heat and pour in the heavy cream, stirring well. Allow it to simmer for a few minutes until slightly thickened.
5. Add the grated Parmesan cheese and stir until melted and creamy. If the sauce is too thick, add a bit of the reserved pasta water to reach desired consistency.
6. Add the cooked pasta to the skillet, tossing to coat it in the sauce. Season with salt and pepper to taste.
7. Serve hot, garnished with fresh parsley.
