Ingredients:
- 8 oz (225 g) pasta (fettuccine or spaghetti)
- 2 cups mushrooms, sliced
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add sliced mushrooms and sauté until golden brown, about 5-7 minutes.
3. Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
4. Pour in the vegetable broth and bring to a simmer. Cook for 3-4 minutes to reduce slightly.
5. Stir in the heavy cream and dried thyme, and season with salt and pepper. Allow the sauce to simmer for another 5 minutes until thickened.
6. Add the cooked pasta to the skillet, tossing to coat in the creamy sauce.
7. Serve immediately, garnished with fresh parsley and grated Parmesan cheese if desired.
