Ingredients:
- 8 oz (225 g) pasta (spaghetti or fettuccine) - 2 cups mushrooms, sliced (button or cremini)
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup vegetable or chicken broth
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside. 2. In a large skillet, heat olive oil over medium heat. Add the sliced mushrooms and sauté for about 5 minutes, until they are tender and browned.
3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes, stirring frequently to avoid burning.
4. Pour in the vegetable or chicken broth and bring to a simmer. Let it reduce for about 5 minutes.
5. Lower the heat and stir in the heavy cream and Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.
6. Season with salt and pepper to taste.
7. Add the cooked pasta to the skillet and toss to coat the pasta in the sauce.
8. Serve hot, garnished with fresh parsley.
