Ingredients:
- 12 oz (340g) pasta (such as fettuccine or penne)
- 2 tablespoons olive oil
- 3 cups mushrooms, sliced (such as cremini or button)
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions:
1. Cook the pasta according to package instructions in a large pot of salted boiling water. Reserve 1 cup of pasta water, then drain the pasta and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes until they are golden brown and tender.
3. Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
4. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth.
5. If the sauce is too thick, add some reserved pasta water to reach the desired consistency. Season with salt and pepper to taste.
6. Add the cooked pasta to the skillet, tossing to coat in the creamy mushroom sauce.
7. Serve immediately, garnished with fresh parsley.
