Ingredients:
- 8 ounces of pasta (fettuccine or spaghetti)
- 2 tablespoons of olive oil
- 1 medium onion, finely chopped
- 3 cups of mushrooms, sliced (button or cremini work well)
- 4 cloves of garlic, minced
- 1 cup of heavy cream
- 1 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
3. Add the sliced mushrooms to the skillet and cook until they are browned and tender, about 5-7 minutes.
4. Stir in the minced garlic and cook for an additional minute, until fragrant.
5. Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes until it thickens slightly.
6. Stir in the grated Parmesan cheese until melted and well combined. Season with salt and pepper to taste.
7. Add the cooked pasta to the skillet and toss to coat the pasta in the creamy sauce.
8. Serve hot, garnished with fresh parsley.
