A delicious and velvety cauliflower spinach soup, perfect as an appetizer, enjoyed with fresh, crusty bread.

Serving Size: 4 servings

Ingredients:

- 1 cauliflower
- 1 onion
- 2 tbsp oil (e.g., olive oil)
- Salt and black pepper to taste
- 4 dl water
- 200 g fresh spinach
- 2 dl milk

Instructions:

1. Separate the cauliflower into florets and finely chop the onion. Sauté the cauliflower florets and onion in oil over medium heat. Add salt and pepper, stirring constantly until the vegetables are lightly browned and fragrant.
2. Pour in the water and cover the pot, letting it simmer until the cauliflower is tender.
3. Remove the pot from heat, add the spinach and warmed milk. Blend the soup until smooth and creamy, adjusting with more liquid and salt if necessary.
4. Heat oil to 180°C (356°F). Quickly fry the fresh spinach in the hot oil for 10-15 seconds. Remove with a slotted spoon and place on paper towels, seasoning immediately with salt.
5. Serve the creamy cauliflower spinach soup topped with crispy spinach and enjoy with fresh bread.
