A delicious dessert with a sophisticated adult flavor, served with a cognac syrup. Prep time: 1 hour, but requires overnight chilling. Serves: 8-10. Ingredients:
- For Caramel:
- 1.5 dl fine sugar
- 2 tbsp cold water
- For the Pudding:
- 2 dl heavy cream
- 3 dl milk
- 2 tbsp espresso powder
- 1 tsp ground vanilla bean
- 4 large eggs
- 4 tbsp powdered sugar
- For the Cognac Coffee Syrup:
- 2 dl coffee liqueur
- 1 dl sugar
- For Vanilla Whipped Cream:
- Heavy cream
- Powdered sugar
- Ground vanilla bean
- For Garnish:
- Toasted almond flakes
- Whole espresso beans
Instructions:
1. Start by making the caramel: Pour sugar into a saucepan in an even layer and drizzle water over the sugar. Heat on low, stirring until the sugar melts and turns amber. Pour the melted sugar in a thin layer at the bottom of the ramekins and let cool.
2. Preheat the oven to 160°C (320°F). In a saucepan, combine milk and cream, add ground vanilla, and heat until nearly boiling.
3. In a bowl, whisk together the eggs, powdered sugar, and espresso powder until frothy. Gradually pour the hot milk mixture into the egg-sugar mixture while whisking continuously. Strain the mixture into a jug and let the foam settle.
4. Place a damp kitchen towel in a large baking dish and arrange the ramekins on top. Pour the pudding mixture over the caramel in the ramekins. Fill the baking dish with boiling water until it reaches halfway up the sides of the ramekins.
5. Bake the puddings in the oven for 40-50 minutes. Let cool, then refrigerate overnight.
6. Prepare the cognac coffee syrup by simmering the coffee liqueur and sugar over low heat until it reduces to a syrup. Let it cool.
7. Whip heavy cream with powdered sugar and vanilla until soft peaks form.
8. To serve: Carefully run a knife around the edges of the puddings and invert them onto plates, allowing the caramel to flow over. Drizzle with cognac coffee syrup, top with vanilla whipped cream, toasted almond flakes, and whole espresso beans.
