Serving Size: 4 servings
Ingredients:
- 12 oz spaghetti
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 tsp red pepper flakes (optional)
- 1 cup fresh basil leaves, chopped
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions:
1. Cook the spaghetti according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the pasta.
2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
3. Add the halved cherry tomatoes to the skillet and cook for 5-7 minutes, stirring occasionally, until they start to soften and release their juices.
4. Add the cooked spaghetti to the skillet along with the reserved pasta water. Toss everything together until the pasta is well coated.
5. Stir in the chopped basil and season with salt and pepper to taste.
6. Serve hot, topped with grated Parmesan cheese if desired.
