Ingredients:
- 400g spaghetti
- 150g pancetta or guanciale, diced
- 3 large eggs
- 100g grated Parmesan cheese
- Freshly ground black pepper
- Salt (for pasta water)
- 2 cloves garlic, minced (optional)
- Fresh parsley, chopped (for garnish, optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.
2. In a pan over medium heat, add the diced pancetta or guanciale. Cook until crispy, about 4-5 minutes. If using, add the minced garlic and cook for an additional minute.
3. In a mixing bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper until well combined.
4. Add the drained spaghetti to the pan with the pancetta, tossing to combine. Remove the pan from heat.
5. Quickly pour the egg and cheese mixture over the pasta, stirring rapidly to create a creamy sauce. Add reserved pasta water a little at a time if needed to achieve desired creaminess.
6. Serve immediately, garnished with chopped parsley and extra Parmesan cheese if desired.
