Classic Spaghetti Carbonara
recipe

A delicious and creamy Italian pasta dish made with eggs, cheese, pancetta, and pepper.
Preparation Time: 20 minutes
Serving Size: 4 servings
Ingredients:
- 400g spaghetti
- 150g pancetta, diced
- 2 large eggs
- 100g grated Parmesan cheese
- Freshly ground black pepper
- Salt
- Fresh parsley, chopped (for garnish)
Instructions:
1. Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente.
2. While the pasta is cooking, heat a skillet over medium heat and add the diced pancetta. Cook until crispy, about 5-7 minutes.
3. In a bowl, whisk together the eggs, grated Parmesan cheese, and a generous amount of black pepper. Set aside.
4. Once the pasta is done, reserve 1 cup of the pasta water and then drain the spaghetti.
5. Quickly add the hot spaghetti to the skillet with the pancetta. Remove from heat.
6. Pour the egg and cheese mixture over the hot pasta, stirring quickly to create a creamy sauce. If the mixture is too thick, add reserved pasta water a little at a time until desired consistency is reached.
7. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
